    As a chef I have always had an interest in putting together unusual and seemingly unworkable flavour combinations. Some of my big successes over the years have included;

    Venison, lime, honey,chilli, sweetcorn, sweet potato and aubergine.

    Seabass, Braised oxtail, WWhite Chocolate veloute, Oxtail/ red wine jus, cabbage.

    Phesant, peach, pink pepper corn, parsley and celery.

    These are just a few examples and I have numerous notebooks filled with ideas that I would like to explore, given the opportunity. So if you are looking for an expeimental/ innovative chef, then please get in touch.
